Take it Easy

The God has silenced his critics, India has won against its closest neighbour & the idol-makers have started making the next God. There are quips, quotes & predictions doing the rounds and 183 is the new 200. Whether the number actually makes future Captains, only time will tell. The sun is shining brighter today and all is well with the world.
                                                                                                                                                                                                                            The day after a glorious victory always feels empty. Like the lull after the storm. You want to keep things simple. Think about things that time has not permitted. Of things that are and things that could be. Lie in the sun and bask. The birds are chirpier and the tone, contemplative yet upbeat. 
                                                                                                  Nothing like Chicken Stew and rice on a day like this. Simple, subtly flavored, delicious. 

Ingredients:
1. 1/2 kg chicken(serves 3-4)
2. 4 medium potatoes- peeled
3. 4 medium onions- peeled
4. 1 small onion- grated
5. 1 medium tomato- grated
6. 3-5 pods of garlic
7. 1 tsp whole garam masala
8. 1-2 bay leaves
9 1/4tsp turmeric
10. Salt to taste
11. 2-3tsp ghee
12. 2 cups water
                                                                                                                                          Method:
1. Allow whole garam masala & bay leaves to splutter in hot oil.









                                                                         2. Saute the grated onion & tomato for 5-6 mins. Add the peeled potatoes, whole onions, garlic pod & chicken and fry for 7-8 minutes.
                                                                                                                                                 3. Add turmeric & salt and mix well. Add water, close the cooker and give the stew 1-2 whistles.
                                                                                                       
Serve piping hot with rice/roti/paratha. Or have just stew. A big bowl of stew. 





Luna had Chicken Stew in our house one Sunday. Went and publicized it in the office the next. From then on Melville has been after my life to get it for him. I evaded for months saying the bird flew. And then we both changed jobs.
