"I can make mudi ghonto, but!"
"Bhalo bhalo, tahole thik aachche." Good, good, then it is okay.
Mudi Ghonto, fish head cooked in fried rice, is a Bengali meal that, if you don't eat, you may still be pardoned. But if you don't know how to make, well, even Momota didi cannot plead your cause!
It is a complete meal so you cook only this the day you make mudi ghonto. That's some respite for the multitasking modern woman. It is pretty non-hassle & keeps the family satiated. Try it whenever you have more than two fish heads & are wondering what to do with them.
You need:
1. Two/more fish heads(rohu/katla)
2. 1 cup rice(washed & strained)
3. 1 large potato- cubed
4. 1/2 cup green peas
5. 3/4 cup chopped onion
6. 1/2 tsp grated ginger
7. 1/2 tsp cumin seeds
9. 1 1/2 tsp sugar
10. 1tsp turmeric powder
11. 1 tsp garam masala(ground/powder)
12. 2 tsp ghee
13. Salt to taste
14. Oil to cook
15. 2 1/2 cups water
1. Deep fry the fish heads till golden brown. Keep aside.
2. In the same oil, crackle cumin seeds & bay leaves. Add chopped onion & saute for 5 mins on high flame.
3. Fry the cubed potatoes for 5-7 mins. Add the grated ginger & fry till you get the aroma.
4. Add the rice, green peas, turmeric powder, sugar & salt. Fry for 5-6 mins.
5. Add the fried fish head & water to the fried rice.
Pressure cook it on high flame till one whistle.
Or, if you are making mudi ghonto in a wok, cover & cook on medium flame for atleast 15 mins. Check to see periodically if rice is cooked.
6. Once done, add the ghee & garam masala powder,stir for 2-3 mins & take it off flame.
Serve mudi ghonto hot with raita. Bengalis love their sweet tomato chutney with this too.
