Bhuna Gosht

Remember that famous advertisement, "meri twacha se meri umar ka pata hi nahi chalta"?


It's a shame they did not rope in Gaurav for it. He is our quintessential Young Man. His contemporaries will age, Gaurav remains our Dev Anand. Many a heart has broken when the PYT asked him 'kis college mein padte ho?' & his little daughter came running,"Papa!"
This young , ambitious corporate, found the Kashmiri Chicken recipe simple but the three hours marination 'a pain in the wrong place.' A tip. Don't marinate it for 3 hours, leave it overnight! You are sleeping/doing a US shift, the meat gets processed & the time doesn't bother you. Howzzat!


Nothing like Bhuna Gosht for the young & the restless. As you keep Googling, your dish is ready, without much looking after! For you, Gaurav :) 


We need:
1. Chicken- 1kg
2. Chopped Onion- 1 1/2 cup
3. Chopped Garlic- 1/4 cup
4. Whole Garam Masala(cardamom, cinnamon, clove)- 2tsp
5. Bay Leaf(Tej Patta)- 3-4
6. Dry Red Chillies- 3-4(or as preferred)
7. Meat Masala- 1-2tsp
8. Salt- to taste
9. Oil- to cook

No turmeric powder or water, please!


How to:
1. Crackle whole garam masala in the hot oil.






2. Add the chopped onions, saute for 5 minutes.




 3. Add the chopped garlic & saute for 3 mins.



 4. Add the chicken pieces,whole red chillies & salt & fry on medium heat.
    Cover the wok & let the chicken become tender.
    




   Check to see after 15 minutes.


5. Put the meat masala & fry for 5 mins before removing from flame.[The yellowish colour is from the meat masala & not turmeric.]






                                                                                           



Serve hot with naan. Or just enjoy the Bhuna. No accessories needed!

You can make this with mutton as well. If you don't mind the red meat, that is.
