Chilli Chicken: Sunday Special

Tuli finally came to my rescue.


I had been begging Ma for some pictures of all that she cooks. She would not oblige. Some unknown hesitation of those pics making it to the blog! From a woman who had wowed family, friends, relatives & neighbours with her culinary skills, this was quite unexpected. But who has ever won with a parent! So I dropped the matter & went ahead with my own kitchen recipes.


Let Go, Let God say The Books. Just when I let go, miracle of miracles, I see pictures in my mailbox today! And step by step! Of the mouth-watering Chilli Chicken Ma is so famous for! Tuli clicked the pics, I was told. Thank you Tuli :)


It's a Sunday. How about some Chilli Chicken & fried rice, people?


Ingredients: [Serves 4-6,depending on appetite!]
1. Boneless chicken- 1/2 kg
2. 1 medium Onion- cubed
3. 1 medium Capsicum - cubed
4. Grated Ginger- 1tsp
5. Sauces:
a. For Marinade
    i. Tomato - 1tbsp
    ii. Chilli - 1/2 tbsp
   iii. Dark Soy(also called Soya) - 1/2 tbsp
b. For Gravy(do not re-use the marinade)
    i. Tomato - 1tbsp
    ii. Chilli - 1/2 tbsp
   iii. Dark Soy(also called Soya) - 1/2 tbsp
6. Deseeded Green Chillies- acc to taste
7. Cornflour- 1 tbsp
8. Salt  - to taste
9. Sugar - 1tsp
10. Ajinomoto- 1/2tsp
11. White Oil - to cook



1. Marinate the chicken with cornflour, tomato sauce, chilli sauce & soya sauce. 


Use an egg for marinade if you want.(optional)








 Let the chicken marinate for 20-30 mins.


Time Saver: 
While the chicken is softening, cut onions & capsicum into cubes & grate the ginger.


Your preparation is now complete.






2. Deep fry the marinaded chicken pieces till golden brown.


By now the chicken is almost cooked.

3. Saute the onion, capsicum & ginger for 5 mins on medium flame.


4. Add  the fried chicken & the deseeded, chopped green chillies. 


Cover pan till chicken softens.




5. Add a paste of cornflour & tomato, chilli & soya sauce to the chicken. Add water if you want gravy.


6. Add salt to taste & 1tsp sugar to the chilli chicken.


7. Add ajinomoto, stir for a minute & take it off flame.











Tip:
Go easy on the salt. Soya sauce has its
own sodium content.






Chilli Chicken goes best with plain fried rice, Chinese fried rice or noodles.


Serve hot.
