Pao Madhuri

She could barely wait for morning to tell her story. Madhuri. 


How she got her name she doesn't know. Family name, perhaps. What she does know is that she is attractive, sweet & loved. And delicious ;)



Ma saw her on TV & told me to try her out in my kitchen. I did. True to her reputation, Pao Madhuri(PM) turned out soft, succulent & YUM! Sweet, indeed!


C'mon folks, Holi is almost round the corner. Kuch jhatpat meetha ho jaaye!

We need:
For the Batter
1. 3 slices of bread[makes 10-12]
2. 1/2 cup Maida
3. 1/2 cup Sooji
4.  3 cups Milk
5. 1/4 tsp Salt
6. 1 tsp Sugar
7. 1tsp Cardamom Powder
For the Syrup
1. 1 cup Sugar
2. 2 cups Water
3. 3-4 Cardamoms
                                                
What to do:
1. Soak bread in milk for 2-3 mins & mash it.

2. Mix the rest of the ingredients in the batter & make into smooth paste.
 









3. When steps 1&2 are happening, make the sugar syrup.
Put the sugar to boil in the water. Throw in the cardamoms for flavour.
It will be a thin syrup. The water remains transparent.


Insight: The brownish colour of the syrup comes with the PMs soaked in it.




4. With a serving spoon, pour
batter in the hot oil. 
Fry both sides till golden brown.




5. Keep the PMs aside till all are done.



6. Pour the sugar syrup on the PM only after syrup is cold.






Your Pao Madhuris are crisp & juicy. The elaichi flavour has wafted through your neighbourhood. Don't open the door now. Curious padosis have gathered outside, demanding to meet Madhuri! Wanting a taste of her...
A friend tasted the PM last evening and said, "Andy, say thank you to your mum. I'm eating puas after so long. They're just too good!"
