Inn The Park

Is in St. James Park adjoining the Buckingham Palace. The name caught my attention. Punning is an art. What they were serving on Valentine's, & probably do on other days as well, fascinated me too. Beef Stew with Herb Dumplings. 

Letting the holy cow craze, I settled for Chicken(I'd saved a few pieces after the Bhuna Gosht). Nothing like having hot piping Chicken Stew with Vegetable & Herb Dumplings on a cold Friday evening. Puurfect way to welcome the weekend.
                                                                                                        To the regular Chicken Stew we make at home, this is a variation. Fast to cook, good to eat & easy to digest. Try this today if you have a few chicken pieces left that won't suffice for the whole family. Stew it up, Gals!




 Ingredients: 
For the Stew:                                                            For Vegetable Herb Dumplings:                                                          
1. Chicken pieces(3-5)                                         1. Rice Flour- 1 small cup
2. Chopped onion- 1/4 cup                                2. Mixed Vegetables- 3/4 cup
3. Chopped tomato- 1/4 cup                             3. Mixed Herbs- 1-2 tsp
4. Brussels Sprouts- 4-5(optional)                  4. Water- 2 1/2 cups
3. Chopped garlic- 1tsp                                        5. Butter- 1-2tsp
4. Whole Garam masala- 1tsp                            6. Salt- a pinch or two
5. Peppercorn- 5-6
6. Pepper Powder- 1tsp
7. Chopped Cilantro- 1-2tsp
8. Butter- 3tsp
9. Salt- to taste
10. Water- 3 cups


How to : Chicken Stew

 1: Splutter whole garam masala in butter.



2: Saute chopped onion for 2-3 mins. Add the chopped garlic & stir for a minute.                                                                                                                                                         

3: Add the chicken pieces & Brussels sprouts(if using) & saute for 3-4 mins.
4: Stir the chopped tomato for a minute or two. 
    Don't allow tomato to cook fully.
5: Add salt & water & pressure cook till 2 whistles.
Vegetable Herb Dumplings:


As the stew is getting pressure cooked, let's do the Veg Herb Dumplings.
 1: In 1-2 tsp of butter, saute the mixed vegetables & herbs for 3-4 minutes.
2: Add water & a pinch of salt & bring to boil. Let the vegetables cook atleast 3/4th.
3: Add rice flour to the boiling vegetables & mix well. 
    Remove from flame. Rice flour sticks to the pan if left on heat for long.
4: Knead the dough well while still hot. Make dumplings of whatever shape you want.
Chicken Stew with Vegetable Herb Dumplings:


By now the chicken stew is done. 


Open the lid, drop in the dumplings & chopped coriander  to the stew & let it simmer for 5 mins on high flame.


Sprinkle pepper powder, take it off flame & serve piping hot.

                                                                                                                                                Served with crispy garlic bread makes it a whole meal, if you are looking for a light  dinner.
