Kashmiri Chicken

There are compliments & there are veiled compliments.
                                                                                                                                                                                                                        This dish will get you both. Trust me on that one. I'd made this with chicken drumsticks for a dinner I hosted last month. The six year old daughter of the family ate three, (much to the parents' embarrassment!) & at the end declared,'aami eta India niye jaabo!' I will take it to India! Now that is one of the best compliments I've received as a chef :)
                                                                                                                                                                                                                              One of the simplest chicken dishes available on Mother Earth, Kashmiri Chicken is a sure shot hit. Try it today!


You need:
1. Chicken- 1kg
2. Yogurt- 500gms
3. Chopped Onions- 1 1/2 cups
4. Chopped Garlic- 3-4 big cloves
5. Garam Masala(whole)- 20-25gm
6. Red Chilli Powder- as preferred
7. Kashmiri Mirch - 1-2tsp (esp for colour)
8. Salt- to taste
9. Sugar- 1-2tsp
10. Chopped Cilantro- to garnish(optional)
11. Oil- to cook

Method: 
1. Marinate the chicken in yogurt & red chilli powder for at least 3 hrs.





 2. In hot oil, let whole garam masala(cardamom,cinnamon & clove) crackle for 1 min.
 Stir in the sugar.


 3. Add chopped onion & fry on high flame for 3-4 mins. 
Add chopped garlic & fry till both turn slight golden brown. 




4. Add marinaded chicken.
    Add salt.
    Cover the wok & let the chicken cook  for 15-20 mins on low flame.



 5. Add Kashmiri Mirch before  you take it off the flame. 
    This gives you that  restaurant look!
    Garnish with chopped cilantro or serve as is.




Isn't it super easy! And so yum ki ungliyan chaattey reh jaoge! I made it for dinner tonight. Served it with rice(also goes well with naan). The family dug into it without a word. Lifted their eyes only when the bones had been chewed to the last. Now that's what I call a veiled compliment!
